Lately I have been eating a lot of rice cakes, and noticing that they have a lot in common with two things: 1) Styrofoam; and 2) tasteless cheese doodles. They certainly have some fun-factor and delightful crunch, but the disappointment begins once they touch your taste buds. Yawn. What to do….what to do… I know!!! Unicorns are fun, cheesecake is fun, and Karbolyn and protein are definitely fun! This certainly has some potential.

Once I made it, yes, it was so much fun my taste buds were having a party in my mouth! The unicorn idea was inspired by the mysteriously popular drink from a certain coffee company, but the nutrition info for that drink was about as much fun as the cardio you would have to do to burn it off your thighs. Who enjoys cardio? Can I have a show of hands? Anyone??

I have been eating clean for so long, there would be no way I could drink something with 76g of sugar and not feel ill. Plus, I don’t want it limited to only a few days of availability! I want it any time I want it!!! Demanding…maybe. We deserve the best—we only get one body so we should treat ours to the best possible fuel! I have turned the unicorn flavor into a delicious post-workout snack that has only 5.5g sugar and tastes like cheesecake using the best supplements in the world! Now THAT’S my kind of FUN!!!

Ingredients:

  • 2 oz. low-fat cream cheese, protein cream cheese, or Neufchatel cheese
  • ¼ cup plain nonfat Greek yogurt
  • 1 scoop vanilla EFX Sports Pure Whey
  • 1 tsp. orange Karbolyn
  • ½ tsp. Blue Razz watermelon Karbolyn
  • ½ tsp. Strawberry Karbolyn
  • 1 scoop of Kre-Alkalyn Powder or two pills
  • 2 drops grape flavoring 4 plain or lightly salted rice cakes

Directions:

If you only have one kind of Karbolyn, you can use just that kind but it’s a heck of a lot more fun as unicorn flavor! Just use 1.5-2 tsp. of the flavor of Karbolyn you do have, even neutral works and the topping will taste like vanilla cheesecake or grape. Put the cream cheese, yogurt, and protein in a dish and mash it together with a fork, then use a hand mixer on low to make it smooth.

Separate the mixture into 4 parts and put it in 4 separate smaller bowls. Mix a different flavor of Karbolyn into 3 of them. Add the Kre-Alkalyn powder (or break open two pills) and the grape flavoring drops to the fourth segment of the mixture. Put a little blob of each color on each rice cake and swirl around for the unicorn effect! This feeds two people, so bring a friend who is craving healthy post-workout unicorn!
