Here is a super easy recipe that can help keep you cool AND fortify your diet with the highest quality whey protein! This is so easy anyone can do it—I like easy, it is such a time-saving life-enhancer! These mouthwatering summer treats taste almost exactly like the kind your mom used to buy, yet they are even creamier, and probably a whole lot better for you! No sugar, no high fructose corn syrup, no junk in these babies!
All you need is an ice pop mold and some ice cream sticks, unless your mold already comes with them. You can find them in all price ranges, especially at this time of year. They range from about a dollar to forty dollars, depending on what you want.
- 2 servings of chocolate EFX Sports Pure Whey, Isolate, or Protein 6
- 2 cups of cold unsweetened vanilla almond milk
- 3 tbsp. unsweetened cocoa
- 1 tsp. vanilla extract
- 2 tbsp. non-GMO cornstarch
- 2 packets of stevia sweetener
- A pinch of salt
Mix the cornstarch powder and the cocoa powder together in a small cup or bowl. Pour the cold almond milk and vanilla into a bowl. Quickly whisk in the cornstarch mixture with a fork or whisk into the almond milk until all lumps are gone. Put it in a pot and heat it on medium, stirring constantly for 3-5 minutes (it took me exactly 5 minutes) until the mixture thickens. Add the stevia sweetener, the pinch of salt, and the whey protein of choice and mix thoroughly.
Pour the mixture into the pop molds and refrigerate 4-8 hours. If the pops don’t want to come out of the molds easily, simply immerse the mold in hot water for a few seconds until they loosen. Quickly pull them out and store them in another container. If they are the flat kind, store them upright on their skinny side so they don’t get frozen together or to the container. They may come out as 2 colors, because they whey is a lighter weight than the cornstarch. This is perfectly fine and doesn’t affect the flavor, or the way it will cool you off completely guilt free!
