The name Mississippi Mudslide makes me think of two things: chocolate cake dripping with chocolate syrup sliding off the plate and into my mouth (entirely by accident, yup…) or some super-sugary alcoholic beverages that have 10,000 calories each and happened to have accidentally made their way into my stomach—after the cake, mind you! This shake is neither of those—you don’t have to experience a major ‘snaccident’ nor truckloads of carb-laden guilt to enjoy this mouthwatering chocolaty protein shake.
The idea for all of my chocolate candies originally came from my friend Ron. One day, he told me he made chocolate out of coconut oil, and he brought some into the gym where I worked. I was amazed! It tasted like chocolate, felt like chocolate, looked like chocolate, but it was healthy. The idea Ron presented had seemingly endless possibilities—I decided I was definitely going to have fun with this one!
Yes, you can make your own chocolate and actually have it be healthy! What can be more fun than being told you are SUPPOSED to eat chocolate? Instead of cocoa butter, we will be using virgin or extra virgin coconut oil—not plain coconut oil. I cannot emphasize enough that coconut oil without the word “virgin” or “extra virgin” attached to it is the polar opposite of what you want to be ingesting. It’s totally worth the extra couple of bucks to buy the virgin kind.
I have to admit that my favorite flavor is not chocolate. So, for me to rave about something as weird as chocolate pancakes means they have to be pretty darn special…and they are! These pancakes are moist and chocolaty, and they work great with the easy protein icing I will share with you. In fact, the icing is better for you than almost any syrup because it’s made with yogurt, so it has probiotics, protein, vitamins, and minerals.
